Baked Chicken Thighs with Herbs de Provence 🍋🌿

One of our favorite meals. Baked Chicken Thighs. Fresh. Clean. The kind of flavor that doesn’t need explaining. But you'll be saying Oooh La La!! 

This baked chicken is one of those recipes that feels bougie but is secretly very simple — the kind of meal you make when you want your kitchen to smell amazing without spending all afternoon in it.

I love using Pampered Chef Herbs de Provence here — it adds that soft, French-country flavor that makes even a weeknight dinner feel a little more thoughtful.

Ingredients

  • Herbs de Provence - shaken over thighs

  • 1 teaspoon kosher salt

  • ½ teaspoon ground black pepper

  • 4 chicken thighs

  • Olive oil


Directions

  1. Preheat the oven to 425°F (175°C).

  2. In a small bowl, combine the Herbs de Provence, salt, and pepper.

  3. Rub the mixture evenly over the chicken thighs and place them into a baking dish.

  4. Lightly spray with olive oil cooking spray.

  5. Bake for about 40 minutes, or until the chicken is no longer pink in the center and the juices run clear.

  6. An instant-read thermometer inserted into the center should read at least 165°F (74°C).
